Try Out My Children’s Favourite Recipe!

Meet my children's all-time favorite breakfast: Banana-Blueberry Oat Pancakes!

This recipe has won their hearts not just for its irresistibly delicious taste but also for the fun we have making it together! Starting with the simple joy of peeling and chopping bananas, to the magic moment when oats transform into a smooth batter in the food processor, each step is filled with anticipation and giggles. The addition of eggs brings everything together into a perfect blend, and a dash of baking powder makes sure our pancakes fluff up just right. The final touch, folding in vibrant blueberries, turns the batter into a canvas of color and flavor.

Cooking these pancakes is a little morning adventure, watching for the bubbles to tell us when to flip them to golden perfection. Served warm, each pancake is a hug on a plate, especially when we sprinkle more blueberries on top. It's more than just a breakfast for us; it’s a celebration of healthy, joyful eating. Packed with the antioxidant goodness of blueberries and the satisfying fullness from oats, these pancakes are our guilt-free start into any day. Whip up a batch and see how this delightful blend of flavors and nutrients brings joy to your family's morning routine!

Here’s what you’ll need for a batch that serves four with smiles all around:

  • 1 cup old-fashioned oats
  • 2 ripe bananas
  • 2 eggs
  • 1 cup fresh or frozen blueberries
  • 1/2 teaspoon baking powder

Peel and chop the bananas.

Put the bananas and oats in a food processor. Blend them until smooth.

Add the eggs and blend again until everything’s mixed well.

Throw in the baking powder and give it a quick blend.

Use a spatula to gently mix in the blueberries. Try not to stir too much.

Heat up a non-stick pan over medium heat. Scoop 1/4 cup of the batter for each pancake onto the pan.

Wait for bubbles to appear, then flip them over. Cook until they’re golden brown.

Serve them warm, and if you like, add some more blueberries on top.
